Whisky is a spirit near and dear to the whole Night Works team. Coming from grains, whisky is the natural extension of brewing brought into distilling. Whether it be the corn, wheat, rye and other flavouring grains of bourbon, unmalted barley synonymous with the Irish Pot Still style, experimental grains like rice (such as the Japanese use with Koji to make sake) or the pre-eminently enjoyed single malts of Scotland, whisky is an application of brewing refined through distillation. Accordingly, Night Works draws upon an abundance of knowledge, experience and curiosity cultivated by brewing.
Lone Gum thus seeks to enact visions of whisky as diverse as the un-hopped beers from which they are synthesised. Integrating these approaches with the almost unimaginably complex chemistry of spirit maturation in oak casks, Night Works endeavours to bring forth a plethora of world whisky styles with a dedication to the processes and techniques which birthed them, usually with a dram in hand.
