Gin is one of the most versatile spirits in the world, with just one central tenet; the inclusion of juniper berries. All else is fair game, so it’s little wonder that gin has been an explosive category that has motivated and facilitated more new distilleries to be built in Australia than any other beverage. Of course, that has led to something of a market saturation, and trying to pick which new gin to try as a consumer can sometimes be a daunting process. Almost every distillery on the market is trying to produce a novel interpretation of gin to keep customers engaged and remain relevant in a maelstrom of releases.
While we are always tinkering, experimenting and creating at Night Works, we prioritise process and refinement over novelty and marketability. Only the experiments which lead to flavour combinations we are legitimately excited by proceed to further stages of refinement and tinkering. So if we have a new product to release, you can bet that it has already been through many iterations before becoming available to the public.
